Ingredients

  • ¾ cup orange juice
  • ¼ cup packed brown sugar
  • 2 Tbsp soy sauce
  • 1 tsp minced garlic
  • ½ tsp ground ginger
  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp vegetable oil

Instructions

  1. Whisk together orange juice, brown sugar, soy sauce, garlic, and ginger in a small bowl.
  2. Cut chicken into 1-inch pieces. Cook chicken in hot oil in a large nonstick skillet over medium-high heat until done.
  3. Add orange mixture, and cook, 3 minutes, stirring occasionally. Serve over rice.



Side Dish Ingredients

  • 2 Tbsp soy sauce
  • 2 (8.8-oz) pouches microwavable long grain white rice
  • 2 (8-oz) pkg sugar snap peas

Side Dish Instructions

  1. Heat rice according to package directions; season with salt and pepper, if desired.
  2. Steam peas according to package directions; toss with soy sauce.
