Tex-Mex Caesar Salad

Ingredients
- 2 lb boneless, skinless chicken breasts
- 1 (1-oz) envelope taco seasoning mix
- 2 Tbsp olive oil
- 2 (8.8-oz) chopped Caesar salad kits
- 1 (15-oz) can black beans, rinsed and drained
- 1 (12-oz) pkg frozen whole kernel corn, thawed
- 1 pint grape tomatoes, halved
- 2 avocados, chopped
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle with seasoning. Cook chicken in hot oil in a large nonstick skillet over medium heat 5 to 6 minutes per side or until done. Let stand 5 minutes; coarsely chop or slice.
- Meanwhile, prepare salad kits according to package directions in a large bowl. Add beans, corn, and tomatoes; toss.
- Divide salads among 6 plates; top with chicken and avocado.
