Chicken Potato Casserole

Ingredients
- 4 Tbsp butter, divided
- 2 Tbsp all purpose flour
- 2½ cups chicken broth
- 1 (10.5-oz) can cream of chicken soup
- 3 cups chopped rotisserie chicken
- 2 (10-oz) pkg frozen classic mixed vegetables
- 2 Tbsp chopped fresh tarragon
- 1 (32-oz) container refrigerated mashed potatoes
Instructions
- Preheat broiler. Melt 2 Tbsp butter in a large skillet or saucepan over medium heat. Add flour; cook, stirring constantly, 2 minutes. Add broth and soup; cook 1 minute, stirring constantly.
- Stir in chicken, vegetables, and tarragon. Simmer 8 minutes or until thickened. Season with salt and pepper, if desired. Spoon into a greased broilerproof baking dish.
- Meanwhile, heat potatoes according to package directions. Spoon over chicken filling; drizzle with 2 Tbsp melted butter.
- Broil 2 to 4 minutes or until top is browned.
