Chicken Potato Casserole

Ingredients

  • 4 Tbsp butter, divided
  • 2 Tbsp all purpose flour
  • 2½ cups chicken broth
  • 1 (10.5-oz) can cream of chicken soup
  • 3 cups chopped rotisserie chicken
  • 2 (10-oz) pkg frozen classic mixed vegetables
  • 2 Tbsp chopped fresh tarragon
  • 1 (32-oz) container refrigerated mashed potatoes

Instructions

  1. Preheat broiler. Melt 2 Tbsp butter in a large skillet or saucepan over medium heat. Add flour; cook, stirring constantly, 2 minutes. Add broth and soup; cook 1 minute, stirring constantly.
  2. Stir in chicken, vegetables, and tarragon. Simmer 8 minutes or until thickened. Season with salt and pepper, if desired. Spoon into a greased broilerproof baking dish.
  3. Meanwhile, heat potatoes according to package directions. Spoon over chicken filling; drizzle with 2 Tbsp melted butter.
  4. Broil 2 to 4 minutes or until top is browned.
