Italian Chicken

Quick-Roasted Broccolini

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 cup zesty Italian dressing
  • 1 tsp garlic salt
  • 2 Tbsp olive oil
  • 1 cup pasta sauce
  • 1 (8-oz) pkg shredded Italian blend cheese

Instructions

  1. Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet. Place chicken in a large zip-top plastic bag; add dressing. Seal bag, and marinate 5 to 10 minutes.
  2. Remove chicken from marinade, discarding marinade; sprinkle chicken with garlic salt and desired amount of pepper.
  3. Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes per side or until browned. Reduce heat to medium. Top chicken with pasta sauce, and cook 8 to 10 minutes or until done, turning once.
  4. Top chicken with cheese; cover and cook 1 minute or until cheese is melted.

  • 2 (6-oz) pkg trimmed Broccolini
  • 3 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together Broccolini, oil, garlic powder, salt, and pepper on a rimmed baking sheet.
  2. Bake 6 minutes or until tender, stirring once.
