Tuscan Turkey Panini

Ingredients

  • ½ cup mayonnaise
  • ¼ cup oil packed sun dried tomatoes, diced
  • 1 tsp garlic powder
  • 1 (14-oz) Italian bread loaf
  • 1 (8-oz) pkg sliced mozzarella cheese
  • 1 lb deli sliced turkey
  • 2 cups baby spinach

Instructions

  1. Stir together mayonnaise, tomatoes, and garlic powder in a small bowl.
  2. Cut bread loaf in half lengthwise. Spread mayonnaise mixture over cut sides of bread. Layer cheese slices over mayonnaise mixture.
  3. Top with turkey and spinach. Cover with bread top. Coat outsides of sandwich with cooking spray.
  4. Cook sandwich in a large skillet (or a panini press) over medium heat, pressing sandwich down using a heavy skillet, 5 to 6 minutes per side or until toasted and cheese is melted. Slice to serve.
