Tuscan Turkey Panini
Broccoli Crunch Salads
Ingredients
- ½ cup mayonnaise
- ¼ cup oil packed sun dried tomatoes, diced
- 1 tsp garlic powder
- 1 (14-oz) Italian bread loaf
- 1 (8-oz) pkg sliced mozzarella cheese
- 1 lb deli sliced turkey
- 2 cups baby spinach
Instructions
- Stir together mayonnaise, tomatoes, and garlic powder in a small bowl.
- Cut bread loaf in half lengthwise. Spread mayonnaise mixture over cut sides of bread. Layer cheese slices over mayonnaise mixture.
- Top with turkey and spinach. Cover with bread top. Coat outsides of sandwich with cooking spray.
- Cook sandwich in a large skillet (or a panini press) over medium heat, pressing sandwich down using a heavy skillet, 5 to 6 minutes per side or until toasted and cheese is melted. Slice to serve.
