Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ⅓ cup all purpose flour
  • 1 Tbsp lemon pepper seasoning
  • 6 Tbsp butter, divided
  • 3 Tbsp honey

Instructions

  1. Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet.
  2. Stir together flour and lemon-pepper in a shallow bowl; dredge chicken in flour mixture.
  3. Melt 3 Tbsp butter in a large nonstick skillet over medium heat. Add chicken, and cook 5 to 6 minutes per side or until done.
  4. Melt remaining 3 Tbsp butter; whisk in honey. Pour over chicken.

  • 1 (32-oz) pkg refrigerated mashed potatoes
  • 2 (10-oz) pkg asparagus spears

Side Dish Instructions

  1. Heat potatoes according to package directions.
  2. Steam asparagus according to package directions; season with salt and pepper, if desired.
