Skillet Lemon-Pepper Chicken
Mashed Potatoes and Asparagus

Ingredients
- 2 lb boneless, skinless chicken breasts
- ⅓ cup all purpose flour
- 1 Tbsp lemon pepper seasoning
- 6 Tbsp butter, divided
- 3 Tbsp honey
Instructions
- Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet.
- Stir together flour and lemon-pepper in a shallow bowl; dredge chicken in flour mixture.
- Melt 3 Tbsp butter in a large nonstick skillet over medium heat. Add chicken, and cook 5 to 6 minutes per side or until done.
- Melt remaining 3 Tbsp butter; whisk in honey. Pour over chicken.

- 2 (10-oz) pkg asparagus spears
Side Dish Instructions
- Heat potatoes according to package directions.
- Steam asparagus according to package directions; season with salt and pepper, if desired.
