Oven-Baked Chicken Parmesan
Parmesan-Roasted Asparagus
Ingredients
- ⅓ cup almond flour
- ¼ cup panko breadcrumbs
- ¼ cup freshly grated Parmesan cheese
- ¾ tsp Italian seasoning
- 1 large egg
- 1 lb boneless, skinless chicken breasts
- ½ tsp garlic powder
- ½ tsp pepper
- 1 cup marinara sauce, divided
- 3 slices mozzarella cheese
Instructions
- Preheat oven to 425°F. Place a wire rack on a foil-lined rimmed baking sheet; lightly coat rack with cooking spray.
- Combine flour, breadcrumbs, Parmesan, and Italian seasoning in a shallow bowl. Lightly beat egg in another shallow bowl.
- Sprinkle chicken with garlic powder and pepper. Dip chicken in egg, and dredge in almond flour mixture, pressing gently to adhere. Place chicken on prepared rack.
- Bake 18 to 20 minutes. Top with ½ cup marinara sauce and mozzarella. Bake 2 to 3 minutes longer or until cheese melts.
- Serve chicken with remaining ½ cup marinara sauce.

- 1 lb asparagus, trimmed
- ¼ cup freshly grated Parmesan cheese
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together asparagus, oil, salt, and pepper on a rimmed baking sheet coated in cooking spray; spread in a single layer.
- Bake 10 minutes or until asparagus is lightly browned. Sprinkle with cheese.
