Oven-Baked Chicken Parmesan

Parmesan-Roasted Asparagus

Ingredients

  • ⅓ cup almond flour
  • ¼ cup panko breadcrumbs
  • ¼ cup freshly grated Parmesan cheese
  • ¾ tsp Italian seasoning
  • 1 large egg
  • 1 lb boneless, skinless chicken breasts
  • ½ tsp garlic powder
  • ½ tsp pepper
  • 1 cup marinara sauce, divided
  • 3 slices mozzarella cheese

Instructions

  1. Preheat oven to 425°F. Place a wire rack on a foil-lined rimmed baking sheet; lightly coat rack with cooking spray.
  2. Combine flour, breadcrumbs, Parmesan, and Italian seasoning in a shallow bowl. Lightly beat egg in another shallow bowl.
  3. Sprinkle chicken with garlic powder and pepper. Dip chicken in egg, and dredge in almond flour mixture, pressing gently to adhere. Place chicken on prepared rack.
  4. Bake 18 to 20 minutes. Top with ½ cup marinara sauce and mozzarella. Bake 2 to 3 minutes longer or until cheese melts.
  5. Serve chicken with remaining ½ cup marinara sauce.

  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together asparagus, oil, salt, and pepper on a rimmed baking sheet coated in cooking spray; spread in a single layer.
  2. Bake 10 minutes or until asparagus is lightly browned. Sprinkle with cheese.
