Ingredients
- 1 lb lean ground beef
- ¼ onion, chopped
- 1 clove garlic, minced
- 1 (10-oz) can diced tomatoes with green chiles
- 1½ Tbsp taco seasoning mix
- ¼ cup water
- ½ cup shredded Mexican blend cheese
- ½ head romaine lettuce, shredded
- 1 avocado, sliced
Instructions
- Cook beef, onion, and garlic in a large skillet over medium-high heat until browned and crumbly; drain and return to skillet.
- Add tomatoes, taco seasoning, and water; reduce heat to medium-low. Cook 5 minutes or until slightly thickened and thoroughly heated. Remove from heat. Sprinkle with cheese; cover and let stand 2 minutes or until melted.
- Serve beef mixture over lettuce, and top with avocado.
