Italian Smothered Chicken

Quick-Roasted Broccolini

Ingredients

  • 1 lb boneless, skinless chicken breasts, halved crosswise
  • ½ cup olive oil vinaigrette
  • ¼ tsp garlic salt
  • ¼ tsp pepper
  • ½ cup marinara sauce
  • ¾ cup shredded Italian blend cheese

Instructions

  1. Pound chicken to an even thickness between plastic wrap using a meat mallet. Place chicken in a large zip-top plastic bag; add vinaigrette. Seal bag, and refrigerate at least 2 hours.
  2. Remove chicken from marinade; discard marinade. Sprinkle chicken with garlic salt and pepper.
  3. Cook chicken in a nonstick skillet over medium-high heat 3 minutes per side or until browned. Reduce heat to medium. Top chicken with marinara sauce, and cook 8 to 10 minutes or until done.
  4. Top chicken with cheese; cook, covered, 1 minute or until cheese melts.

  • 1 lb Broccolini
  • 1½ Tbsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp salt

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer. Bake 10 minutes or until broccolini is tender.
