Italian Smothered Chicken
Quick-Roasted Broccolini
Ingredients
- 1 lb boneless, skinless chicken breasts, halved crosswise
- ½ cup olive oil vinaigrette
- ¼ tsp garlic salt
- ¼ tsp pepper
- ½ cup marinara sauce
- ¾ cup shredded Italian blend cheese
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet. Place chicken in a large zip-top plastic bag; add vinaigrette. Seal bag, and refrigerate at least 2 hours.
- Remove chicken from marinade; discard marinade. Sprinkle chicken with garlic salt and pepper.
- Cook chicken in a nonstick skillet over medium-high heat 3 minutes per side or until browned. Reduce heat to medium. Top chicken with marinara sauce, and cook 8 to 10 minutes or until done.
- Top chicken with cheese; cook, covered, 1 minute or until cheese melts.

- 1 lb Broccolini
- 1½ Tbsp olive oil
- ½ tsp garlic powder
- ¼ tsp salt
Side Dish Instructions
- Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer. Bake 10 minutes or until broccolini is tender.
