Ingredients

  • 1 lb boneless pork chops
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ¼ cup pesto
  • 1 Roma tomato, thinly sliced
  • ⅓ cup freshly shredded Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Sprinkle pork with salt and pepper; place on a rimmed baking sheet. Top pork with pesto, tomato slices, and cheese.
  2. Bake 20 to 25 minutes, depending upon thickness of pork chops, or until a meat thermometer inserted in thickest portion reads 145°F.

  • 1 (8-oz) pkg whole mushrooms, quartered
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • ⅛ tsp salt
  • ⅛ tsp pepper

  1. Preheat oven to 400°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
  2. Bake 20 minutes or until vegetables are browned and tender.
