Parmesan-Pesto Pork Chops

Ingredients
- 1 lb boneless pork chops
- ⅛ tsp salt
- ⅛ tsp pepper
- ¼ cup pesto
- 1 Roma tomato, thinly sliced
- ⅓ cup freshly shredded Parmesan cheese
Instructions
- Preheat oven to 400°F. Sprinkle pork with salt and pepper; place on a rimmed baking sheet. Top pork with pesto, tomato slices, and cheese.
- Bake 20 to 25 minutes, depending upon thickness of pork chops, or until a meat thermometer inserted in thickest portion reads 145°F.

- 1 (8-oz) pkg whole mushrooms, quartered
- 1 Tbsp olive oil
- 1 clove garlic, minced
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
- Bake 20 minutes or until vegetables are browned and tender.
