Flank Steak with Peanut Sauce

Ingredients

  • ¾ lb flank steak
  • ¼ tsp salt
  • ⅛ tsp pepper
  • ¾ cup coconut milk
  • 3 Tbsp no sugar added peanut butter
  • ¾ Tbsp fresh lime juice
  • 1½ Tbsp less sodium soy sauce

Instructions

  1. Preheat grill or grill pan coated with cooking spray to medium-high heat.
  2. Sprinkle steak with salt and pepper. Grill, covered, 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  3. Whisk together coconut milk, peanut butter, lime juice, and soy sauce. Add water, if needed, to reach desired consistency. Serve sauce with steak.

  • 1 lb asparagus, trimmed
  • 1½ Tbsp olive oil
  • ¼ tsp garlic salt

Side Dish Instructions

  1. Preheat oven to 400°F. Toss asparagus with oil and garlic salt. Spread in a single layer on a rimmed baking sheet.
  2. Bake 9 to 11 minutes or until crisp-tender.
