Flank Steak with Peanut Sauce
Oven-Roasted Asparagus
Ingredients
- ¾ lb flank steak
- ¼ tsp salt
- ⅛ tsp pepper
- ¾ cup coconut milk
- 3 Tbsp no sugar added peanut butter
- ¾ Tbsp fresh lime juice
- 1½ Tbsp less sodium soy sauce
Instructions
- Preheat grill or grill pan coated with cooking spray to medium-high heat.
- Sprinkle steak with salt and pepper. Grill, covered, 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
- Whisk together coconut milk, peanut butter, lime juice, and soy sauce. Add water, if needed, to reach desired consistency. Serve sauce with steak.

- 1 lb asparagus, trimmed
- 1½ Tbsp olive oil
- ¼ tsp garlic salt
Side Dish Instructions
- Preheat oven to 400°F. Toss asparagus with oil and garlic salt. Spread in a single layer on a rimmed baking sheet.
- Bake 9 to 11 minutes or until crisp-tender.
