1 (14.5-oz) can no-salt-added diced tomatoes with green chiles
1 (8-oz) can BPA-free organic tomato sauce
1 (14.5-oz) can low-sodium beef broth
1 cup water
½ tsp salt
½ (16-oz) pkg whole-grain elbow macaroni
1¾ cups shredded sharp Cheddar cheese
½ cup chopped fresh cilantro
2 green onions, chopped
Instructions
Cook beef, onion, and garlic in a large, deep skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
Stir in chili powder, tomatoes, tomato sauce, broth, water, and salt. Bring to a boil; add macaroni.
Cook 10 minutes or until macaroni is tender, stirring occasionally. Sprinkle with cheese; cover and let stand 2 minutes or until cheese is melted. Sprinkle with cilantro and onions.
