Sausage-Feta Toasted Gnocchi
Simple Spinach Salad
Ingredients
- 2 (16-oz) pkg potato gnocchi
- 6 Tbsp butter
- 1 (16-oz) pkg mild Italian chicken sausage, sliced
- 2 cloves garlic, minced
- 2 tsp dried crushed rosemary
- 1 cup less sodium chicken broth
- ½ cup heavy cream
- ¾ cup crumbled feta cheese
- ¼ cup chopped fresh parsley
Instructions
- Melt 3 Tbsp butter in a large skillet over medium heat. Add 1 pkg gnocchi, spreading in a single layer in skillet. Cook 8 minutes or until crisp and tender, turning to brown on all sides. Remove gnocchi from skillet; keep warm. Repeat with remaining butter and gnocchi.
- Meanwhile, cook sausage in a large skillet over medium-high heat 5 to 6 minutes or until lightly browned. Add garlic and rosemary; cook 1 to 2 minutes or until fragrant. Add broth and cream; cook 5 to 6 minutes or until reduced by half.
- Divide gnocchi among 6 bowls; top with sausage mixture and cheese. Sprinkle with parsley, if desired.

- ⅓ cup olive oil vinaigrette
- 1 (10-oz) pkg spinach
Side Dish Instructions
- Toss together spinach and vinaigrette in a large bowl.
