Sausage-Feta Toasted Gnocchi

Simple Spinach Salad

Ingredients

  • 2 (16-oz) pkg potato gnocchi
  • 6 Tbsp butter
  • 1 (16-oz) pkg mild Italian chicken sausage, sliced
  • 2 cloves garlic, minced
  • 2 tsp dried crushed rosemary
  • 1 cup less sodium chicken broth
  • ½ cup heavy cream
  • ¾ cup crumbled feta cheese
  • ¼ cup chopped fresh parsley

Instructions

  1. Melt 3 Tbsp butter in a large skillet over medium heat. Add 1 pkg gnocchi, spreading in a single layer in skillet. Cook 8 minutes or until crisp and tender, turning to brown on all sides. Remove gnocchi from skillet; keep warm. Repeat with remaining butter and gnocchi.
  2. Meanwhile, cook sausage in a large skillet over medium-high heat 5 to 6 minutes or until lightly browned. Add garlic and rosemary; cook 1 to 2 minutes or until fragrant. Add broth and cream; cook 5 to 6 minutes or until reduced by half.
  3. Divide gnocchi among 6 bowls; top with sausage mixture and cheese. Sprinkle with parsley, if desired.

  • ⅓ cup olive oil vinaigrette
  • 1 (10-oz) pkg spinach

Side Dish Instructions

  1. Toss together spinach and vinaigrette in a large bowl.
