Mozzarella Burgers in Tomato Gravy

Ingredients

  • ¾ lb lean ground beef
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • 1 Tbsp olive oil
  • 1 cup grape tomatoes
  • ½ (24-oz) jar marinara sauce 
  • 3 (1-oz) slices fresh mozzarella cheese
  • 1 Tbsp torn fresh basil leaves

Instructions

  1. Shape beef into 3 patties; sprinkle both sides with salt and pepper. Cook in a nonstick skillet over medium heat 4 to 5 minutes per side or until done. Remove from skillet; keep warm, and wipe skillet clean.
  2. Sauté mushrooms in hot oil in same skillet 5 minutes or until tender. Stir in tomatoes and marinara sauce; cook 3 to 4 minutes or until thoroughly heated. Nestle burgers in sauce, and top with cheese; cook 1 minute or until cheese melts. Sprinkle with basil.

  • 1 (16-oz) pkg zucchini noodles
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook zucchini and garlic in hot oil in a skillet over medium-high heat, stirring often, 2 to 3 minutes or until thoroughly heated. Sprinkle with salt and pepper.
