Crispy Onion Parmesan Chicken
Mashed Potatoes and Green Beans
Ingredients
- ¾ lb boneless, skinless chicken breasts
- 3 Tbsp mayonnaise
- 1 Tbsp Dijon mustard
- ¼ cup panko breadcrumbs
- ⅓ cup crushed French fried onions
- 1 Tbsp grated Parmesan cheese
Instructions
- Preheat oven to 425°F. Cut each chicken breast in half crosswise and pound to an even thickness between plastic wrap using a meat mallet.
- Lightly season chicken with salt and pepper, if desired. Stir together mayonnaise and mustard in a small bowl. Stir together breadcrumbs, crushed onions, and cheese in a shallow dish.
- Brush chicken all over with mayonnaise mixture; dredge in breadcrumb mixture to coat. Place on a lightly greased wire rack over a rimmed baking sheet. Bake 20 minutes or until golden brown and done.

- ½ (24-oz) pkg refrigerated mashed potatoes
- 1 (8-oz) pkg thin green beans
- ¼ tsp garlic powder
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Cook potatoes and green beans according to package directions. Toss beans with garlic powder, salt, and pepper.
