Crispy Onion Parmesan Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 3 Tbsp mayonnaise
  • 1 Tbsp Dijon mustard
  • ¼ cup panko breadcrumbs
  • ⅓ cup crushed French fried onions
  • 1 Tbsp grated Parmesan cheese

Instructions

  1. Preheat oven to 425°F. Cut each chicken breast in half crosswise and pound to an even thickness between plastic wrap using a meat mallet.
  2. Lightly season chicken with salt and pepper, if desired. Stir together mayonnaise and mustard in a small bowl. Stir together breadcrumbs, crushed onions, and cheese in a shallow dish.
  3. Brush chicken all over with mayonnaise mixture; dredge in breadcrumb mixture to coat. Place on a lightly greased wire rack over a rimmed baking sheet. Bake 20 minutes or until golden brown and done.

  • ½ (24-oz) pkg refrigerated mashed potatoes
  • 1 (8-oz) pkg thin green beans 
  • ¼ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook potatoes and green beans according to package directions. Toss beans with garlic powder, salt, and pepper.
