Ginger Chicken Tacos
Pineapple-Green Onion Rice
Ingredients
- ½ lb ground chicken
- ⅓ cup chopped onion
- 1 Tbsp olive or vegetable oil
- 1½ Tbsp less sodium soy sauce
- 2 tsp brown sugar
- 2 tsp natural rice vinegar
- ⅛ tsp ground ginger
- ⅛ tsp crushed red pepper
- 1 clove garlic, minced
- 4 soft taco size flour tortillas
- 1½ cups shredded carrots
- 1 green onion, sliced
Instructions
- Cook chicken and onion in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until chicken is done and onion is tender.
- Meanwhile, stir together soy sauce, brown sugar, vinegar, ginger, red pepper, and garlic. Add to skillet with chicken mixture; cook 3 minutes or until thickened.
Side Dish Ingredients
- ⅓ cup long grain white rice
- 2 tsp brown sugar
- 1 Tbsp olive or vegetable oil
- 1 green onion, sliced
- 1 cup canned pineapple chunks in juice, well drained
Side Dish Instructions
- Stir together rice, pineapple mixture, and green onion.
- Meanwhile, cook pineapple and brown sugar in hot oil in a skillet over medium-high heat 8 to 10 minutes or until pineapple is browned.
- Cook rice according to package directions.
