Ginger Chicken Tacos

Ingredients

  • ½ lb ground chicken
  • ⅓ cup chopped onion
  • 1 Tbsp olive or vegetable oil
  • 1½ Tbsp less sodium soy sauce
  • 2 tsp brown sugar
  • 2 tsp natural rice vinegar
  • ⅛ tsp ground ginger
  • ⅛ tsp crushed red pepper
  • 1 clove garlic, minced
  • 4 soft taco size flour tortillas
  • 1½ cups shredded carrots
  • 1 green onion, sliced

Instructions

  1. Cook chicken and onion in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until chicken is done and onion is tender.
  2. Meanwhile, stir together soy sauce, brown sugar, vinegar, ginger, red pepper, and garlic. Add to skillet with chicken mixture; cook 3 minutes or until thickened.



Side Dish Ingredients

  • ⅓ cup long grain white rice
  • 2 tsp brown sugar
  • 1 Tbsp olive or vegetable oil
  • 1 green onion, sliced
  • 1 cup canned pineapple chunks in juice, well drained

Side Dish Instructions

  1. Stir together rice, pineapple mixture, and green onion.
  2. Meanwhile, cook pineapple and brown sugar in hot oil in a skillet over medium-high heat 8 to 10 minutes or until pineapple is browned.
  3. Cook rice according to package directions.
