Super Easy Beef Fajitas

Spanish Rice and Guacamole with Chips

Ingredients

  • ½ (24-oz) pkg frozen fully cooked beef fajitas
  • ½ (20-oz) pkg frozen pepper and onion blend
  • 1 Tbsp minced garlic
  • ½ lime
  • 6 fajita-size flour tortillas
  • ½ (8-oz) pkg shredded Mexican-blend cheese (or use any shredded cheese)
  • ½ (16-oz) container refrigerated salsa

Instructions

  1. Reheat fajita meat according to package directions. Heat pepper and onion blend according to package directions for lightly oiled frying pan over medium heat. Stir in garlic; season with salt and pepper, if desired. Cook 1 minute longer.
  2. Add fajita meat to skillet, and toss. Squeeze lime over all ingredients. Season again with salt and pepper, if desired.
  3. Heat tortillas according to package directions. Fill tortillas with fajita meat and vegetables. Add cheese and salsa.



Side Dish Ingredients

  • 1 (8.8-oz) pouch Spanish rice
  • ½ (16-oz) container guacamole
  • ½ (11-oz) pkg tortilla chips

Side Dish Instructions

  1. Cook rice according to package directions. Serve rice and guacamole on each plate. Serve with tortilla chips.
