Shepherd's Pie over Biscuits

Ingredients

  • 2 frozen buttermilk biscuits
  • ½ lb ground beef
  • 1 cup drained canned green beans
  • 1 cup drained canned corn
  • ½ (0.87-oz) pouch low-sodium brown gravy mix
  • 1 cup low-sodium beef broth
  • 1 Tbsp Worcestershire sauce
  • 1 cup refrigerated sour cream mashed potatoes

Instructions

  1. Bake biscuits according to package directions.
  2. Meanwhile, cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
  3. Stir in green beans, corn, gravy mix, broth, and Worcestershire. Bring to a boil, reduce heat, and simmer 5 minutes or until thickened, stirring occasionally.
  4. Heat potatoes according to package directions.
  5. Split biscuits and arrange on 2 plates. Spoon potatoes over biscuits; spoon beef mixture over potatoes.
