Club Sandwich Quesadillas

Dill Pickle Coleslaw and Potato Chips

Ingredients

  • 4 slices bacon
  • 2 burrito size flour tortillas
  • ¼ lb deli sliced less sodium turkey
  • ¼ lb deli sliced less sodium ham
  • ¾ cup shredded Cheddar Jack cheese
  • 2 Tbsp butter
  • ¼ cup Ranch dressing

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Top one side of each tortilla with bacon, turkey, ham, and cheese. Fold tortillas in half.
  3. Melt butter in a large nonstick skillet over medium heat; add quesadillas to skillet. Cook 4 minutes per side or until golden brown. Serve with Ranch dressing.



Side Dish Ingredients

  • ½ cup chopped hamburger dill chips
  • ¼ cup mayonnaise
  • ½ Tbsp lemon juice
  • 1 tsp honey
  • ½ (16-oz) pkg tricolor coleslaw
  • ¼ (8-oz) bag kettle cooked potato chips

Side Dish Instructions

  1. Stir together all ingredients except chips in a large bowl just before serving. Season with salt and pepper, if desired.
  2. Serve chips on each plate.
