Oven-Baked Chicken Parmesan
Parmesan-Roasted AsparagusIngredients
- 1½ cups panko breadcrumbs
- ¾ cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- 2 large eggs
- 2¼ lb boneless, skinless chicken breasts
- ½ tsp garlic powder
- ½ tsp pepper
- ¼ tsp salt
- 1½ cups marinara sauce
- 6 (0.67-oz) slices mozzarella cheese
Instructions
- Preheat oven to 425°F. Combine breadcrumbs, cheese, and Italian seasoning in a shallow bowl. Lightly beat eggs in another shallow bowl.
- Sprinkle chicken with garlic powder, pepper, and salt. Dip chicken in beaten egg, and dredge in breadcrumb mixture, pressing gently to adhere. Place chicken on a greased wire rack on a rimmed baking sheet.
- Bake 18 to 20 minutes. Top with marinara and mozzarella. Bake 2 to 3 minutes longer or until cheese melts.

- 2 lb asparagus, trimmed
- ½ cup freshly grated Parmesan cheese
- ¼ tsp salt
- 2 Tbsp olive oil
- ½ tsp pepper
Side Dish Instructions
- Bake 10 minutes or until crisp-tender. Sprinkle with cheese.
- Preheat oven to 400°F. Toss together asparagus, oil, pepper, and salt on a large greased rimmed baking sheet; spread in a single layer.
