2½ lb boneless, skinless chicken breasts, cut into thin strips
1 (1-oz) envelope fajita seasoning mix
2 Tbsp olive oil
1 onion, thinly sliced
2 red bell peppers, sliced
2 green bell peppers, sliced
2 Roma tomatoes, seeded and cut into wedges
16 fajita-size flour tortillas
1 lime, cut into wedges

Instructions
Sprinkle chicken with fajita seasoning. Cook chicken in hot oil in a large cast-iron skillet over medium-high heat until browned. Remove chicken from skillet, and keep warm.
Add onion, bell peppers, and tomatoes to skillet; cook 5 minutes or until tender. Return chicken to skillet; cook 1 minute.
Heat tortillas according to package directions. Serve chicken in warm tortillas with a squeeze of lime. If desired, serve with Simple Guacamole, Tomatillo Salsa, and The Best Red Salsa recipes.
