Sweet and Sticky Chicken Kabobs

Ingredients

  • 3 Tbsp Dijon mustard
  • 3 Tbsp dark brown sugar
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 2 lb boneless, skinless chicken breasts, cubed
  • ½ tsp salt
  • 1 cup barbecue sauce

Instructions

  1. Stir together mustard, sugar, vinegar, oil, and garlic in a large bowl. Add chicken; toss. Cover, and chill 30 minutes to 2 hours.
  2. Preheat grill or grill pan to medium-high heat. Thread chicken onto metal or soaked bamboo skewers; sprinkle with salt.
  3. Grill skewers 6 to 8 minutes per side or until done. Serve with barbecue sauce.



Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp butter
  • 2 cups long-grain white rice
  • 1 (32-oz) carton low-sodium chicken broth

Side Dish Instructions

  1. Melt butter in a large saucepan over medium heat; add rice, and cook 1 minute. Stir in broth. Bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
  2. Steam broccoli according to package directions.
