Sweet and Sticky Chicken Kabobs
Rice Pilaf and Steamed Broccoli
Ingredients
- 3 Tbsp Dijon mustard
- 3 Tbsp dark brown sugar
- 2 Tbsp apple cider vinegar
- 2 Tbsp olive oil
- 1 tsp garlic powder
- 2 lb boneless, skinless chicken breasts, cubed
- ½ tsp salt
- 1 cup barbecue sauce
Instructions
- Stir together mustard, sugar, vinegar, oil, and garlic in a large bowl. Add chicken; toss. Cover, and chill 30 minutes to 2 hours.
- Preheat grill or grill pan to medium-high heat. Thread chicken onto metal or soaked bamboo skewers; sprinkle with salt.
- Grill skewers 6 to 8 minutes per side or until done. Serve with barbecue sauce.
Side Dish Ingredients
- 2 (12-oz) pkg broccoli florets
- 2 Tbsp butter
- 2 cups long-grain white rice
- 1 (32-oz) carton low-sodium chicken broth
Side Dish Instructions
- Melt butter in a large saucepan over medium heat; add rice, and cook 1 minute. Stir in broth. Bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
- Steam broccoli according to package directions.
