Cheesy Sausage and Tomato Soup
- ½ lb ground pork sausage
- ¼ cup thinly sliced onion
- ½ tsp garlic salt
- 1 Tbsp olive oil
- ½ tsp Italian seasoning
- 2 Roma tomatoes, diced
- 2 oz cream cheese
- ¾ cup low-sodium chicken broth
- ¾ cup heavy cream
- ¼ cup freshly shredded Parmesan cheese
- Cook sausage, onion, and garlic salt in hot oil in a Dutch oven over medium-high heat 5 to 7 minutes or until sausage is browned.
- Add seasoning, tomatoes, and cream cheese; stir until cheese melts, about 2 to 3 minutes.
- Stir in broth and cream; bring to a boil, and simmer 15 to 20 minutes over low heat. Divide soup among 3 bowls; sprinkle with Parmesan cheese.
