Sheet Pan Sesame Chicken and Broccoli

Ingredients

  • 3 Tbsp sesame oil
  • 3 Tbsp less sodium soy sauce
  • 2 Tbsp gochujang
  • 2 lb boneless, skinless chicken thighs, cut into chunks
  • 2 (12-oz) pkg broccoli florets
  • 2 red bell peppers, cut into chunks
  • 2 Tbsp honey
  • 1 Tbsp sesame seeds

Instructions

  1. Preheat oven to 425°F. Stir together oil, soy sauce, and gochujang in a large bowl. Add chicken, broccoli, and bell peppers; toss. Divide between 2 large rimmed baking sheets; spread in even layers.
  2. Bake 20 to 25 minutes or until chicken is done and vegetables are tender.
  3. Drizzle with honey, and sprinkle with sesame seeds.



Side Dish Ingredients

  • ½ cup chopped fresh cilantro
  • 3 (3.5-oz) pouches boil in bag basmati rice

Side Dish Instructions

  1. Cook rice according to package directions. Stir in cilantro.
