Pork Chops with Pears, Blue Cheese, and Balsamic Glaze

Ingredients

  • 6 (6-oz) boneless center-cut loin pork chops
  • 3 Tbsp olive oil
  • 3 firm-ripe red pears, peeled and sliced
  • 1½ cups sliced onions
  • 4 cloves garlic, minced
  • 1 Tbsp chopped fresh rosemary
  • ¼ cup balsamic glaze
  • ½ cup crumbled blue cheese

Instructions

  1. Sprinkle pork lightly with salt and pepper. Cook, in batches, in hot oil in a skillet over medium-high heat 4 to 5 minutes per side or until browned and done; remove from skillet, and keep warm.
  2. Add pears, onion, garlic, and rosemary to skillet; sauté 6 to 8 minutes or until pears and onion are tender.
  3. Serve pear mixture over pork; drizzle with balsamic glaze, and sprinkle with cheese.



Side Dish Ingredients

  • 2 Tbsp olive oil
  • 1 tsp lemon zest
  • 1 lb thin green beans
  • 2 Tbsp chopped fresh parsley
  • 2 Tbsp butter, softened
  • 1 small shallot, minced

Side Dish Instructions

  1. Preheat oven to 450°F. Toss beans with oil in a roasting pan. Bake 8 minutes.
  2. Meanwhile, stir together shallot, parsley, lemon zest, and butter; toss with hot cooked beans. Season with salt and pepper to taste.
