Grilled Salmon with Herb Vinaigrette
Couscous and Tomatoes with Asparagus
Ingredients
- 1 Tbsp olive oil
- ½ shallot, minced
- 1 Tbsp chopped fresh parsley
- 1 tsp whole grain Dijon mustard
- 2 (6-oz) salmon fillets
Instructions
- Whisk together oil, shallot, parsley, and mustard in a bowl; season with salt and pepper, if desired.
- Meanwhile, preheat grill or grill pan to medium-high heat. Season fish with salt and pepper, if desired.
- Grill fish, 5 to 6 minutes per side, depending upon thickness of fish, to desired doneness. Spoon vinaigrette over fish.
Side Dish Ingredients
- ½ (10-oz) pkg plain couscous
- 1 Roma tomato, chopped
- 1 Tbsp chopped fresh parsley
- 2 Tbsp lemon vinaigrette
- ½ (10-oz) pkg asparagus spears
Side Dish Instructions
- Prepare couscous according to package directions.
- Toss together couscous, tomato, parsley, and vinaigrette in a large bowl.
- Meanwhile, steam asparagus according to package directions; season with salt and pepper, if desired.
