Grilled Salmon with Herb Vinaigrette

Ingredients

  • 1 Tbsp olive oil
  • ½ shallot, minced
  • 1 Tbsp chopped fresh parsley
  • 1 tsp whole grain Dijon mustard
  • 2 (6-oz) salmon fillets

Instructions

  1. Whisk together oil, shallot, parsley, and mustard in a bowl; season with salt and pepper, if desired.
  2. Meanwhile, preheat grill or grill pan to medium-high heat. Season fish with salt and pepper, if desired.
  3. Grill fish, 5 to 6 minutes per side, depending upon thickness of fish, to desired doneness. Spoon vinaigrette over fish.

  • ½ (10-oz) pkg plain couscous
  • 1 Roma tomato, chopped
  • 1 Tbsp chopped fresh parsley
  • 2 Tbsp lemon vinaigrette
  • ½ (10-oz) pkg asparagus spears

Side Dish Instructions

  1. Prepare couscous according to package directions.
  2. Toss together couscous, tomato, parsley, and vinaigrette in a large bowl.
  3. Meanwhile, steam asparagus according to package directions; season with salt and pepper, if desired.
