Pork Carnitas

Ingredients

  • 3 lb boneless pork shoulder roast
  • 1 tsp salt
  • 2 onions, quartered
  • 4 cloves garlic, minced
  • ½ cup orange juice
  • ¼ cup lime juice
  • 2 Tbsp salt free Southwest seasoning (or use fajita seasoning)
  • 12 soft taco size flour tortillas
  • 2 avocados, sliced
  • 4 radishes, sliced
  • 1 cup refrigerated salsa
  • ¼ cup chopped fresh cilantro
  • Lime wedges

Instructions

  1. Rub pork with salt. Place pork, onions, garlic, orange juice, and lime juice in a 6- or 7-quart slow cooker. Cover and cook on LOW 8 hours or until tender.
  2. Shred pork with 2 forks, discarding fat. Toss with Southwest seasoning.
  3. Heat tortillas according to package directions. Serve pork in tortillas with avocado, radishes, salsa, and cilantro. Serve with lime wedges.
