Quick Prep Slow Cooker
Pork Carnitas
Ingredients
- 3 lb boneless pork shoulder roast
- 1 tsp salt
- 2 onions, quartered
- 4 cloves garlic, minced
- ½ cup orange juice
- ¼ cup lime juice
- 2 Tbsp salt free Southwest seasoning (or use fajita seasoning)
- 12 soft taco size flour tortillas
- 2 avocados, sliced
- 4 radishes, sliced
- 1 cup refrigerated salsa
- ¼ cup chopped fresh cilantro
- Lime wedges
Instructions
- Rub pork with salt. Place pork, onions, garlic, orange juice, and lime juice in a 6- or 7-quart slow cooker. Cover and cook on LOW 8 hours or until tender.
- Shred pork with 2 forks, discarding fat. Toss with Southwest seasoning.
- Heat tortillas according to package directions. Serve pork in tortillas with avocado, radishes, salsa, and cilantro. Serve with lime wedges.
