Pineapple-Avocado Chicken Sausage

Ingredients

  • 1 (11-oz) pkg fully cooked Italian chicken sausage links, cut into ½ inch thick slices
  • 1 Tbsp olive oil, divided
  • ½ onion, finely chopped
  • ⅛ tsp salt
  • 1 cup pineapple chunks
  • 1 small avocado, diced

Instructions

  1. Cook sausage ½ Tbsp hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned. Remove from skillet, reserving drippings in skillet.
  2. Heat ½ Tbsp oil with hot drippings in skillet. Add onion and salt; cook 5 minutes. Add sausage and pineapple; cook 2 to 3 minutes or until thoroughly heated. Stir in avocado.



Side Dish Ingredients

  • 3 Tbsp olive oil
  • ½ Tbsp orange juice
  • ¼ tsp Dijon mustard
  • ¼ tsp salt
  • 1 (5-oz) pkg baby spinach
  • 1 carrot, shredded

Side Dish Instructions

  1. Whisk together oil, orange juice, mustard, and salt in a bowl. Add spinach and carrot; toss.
