1 (11-oz) pkg fully cooked Italian chicken sausage links, cut into ½ inch thick slices
1 Tbsp olive oil, divided
½ onion, finely chopped
⅛ tsp salt
1 cup pineapple chunks
1 small avocado, diced
Instructions
Cook sausage ½ Tbsp hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned. Remove from skillet, reserving drippings in skillet.
Heat ½ Tbsp oil with hot drippings in skillet. Add onion and salt; cook 5 minutes. Add sausage and pineapple; cook 2 to 3 minutes or until thoroughly heated. Stir in avocado.
