Creamy Baked Spinach Ravioli

Ingredients

  • ½ (25-oz) pkg frozen cheese ravioli
  • ½ onion, diced
  • 1 Tbsp olive oil
  • 1 Tbsp minced garlic
  • ½ (6-oz) pkg baby spinach
  • ¼ cup reduced fat milk
  • 1½ tsp cornstarch
  • ½ cup heavy cream
  • ¾ cup grated Parmesan cheese, divided

Instructions

  1. Preheat oven to 350°F. Cook ravioli according to package directions.
  2. Meanwhile, cook onion in hot oil in an ovenproof skillet over medium-high heat 8 minutes. Add garlic and spinach; cook 1 to 2 minutes or until garlic is fragrant and spinach wilts.
  3. Stir together milk and cornstarch. Add the cream and milk mixture to the skillet, reduce heat to medium, and cook 5 minutes or until thickened.
  4. Stir in ravioli and ½ cup cheese until combined. Sprinkle with ¼ cup cheese. Bake 10 to 15 minutes or until top is lightly browned.
