Fancy Naan Grilled Cheese

Ingredients

  • 5 Tbsp vegan butter, softened and divided
  • 1 shallot, thinly sliced
  • 1 onion, thinly sliced
  • 1 tsp salt free garlic and herb seasoning blend
  • 6 pieces whole grain naan, halved crosswise
  • 2 cups shredded Cheddar cheese

Instructions

  1. Melt 1 Tbsp butter in a large nonstick skillet over medium heat; add shallot and onion. Cook, stirring, 3 minutes.
  2. Meanwhile, combine 4 Tbsp butter and seasoning; spread mixture on one side of each naan piece.
  3. Flip naan over; top half of naan pieces with onion mixture and cheese. Cover with remaining naan, butter sides up.
  4. Cook sandwiches, in batches, in skillet over medium heat 3 to 4 minutes per side or until golden and cheese melts.



Side Dish Ingredients

  • 6 tomatoes, cut into chunks
  • 2 Tbsp olive oil
  • ¼ cup chopped fresh basil

Side Dish Instructions

  1. Toss together all ingredients in a medium bowl; season with salt and pepper, if desired.
