Cider-Glazed Chicken
Mashed Potates and Pecan Brussels Sprouts

Ingredients
- 6 (6-oz) boneless, skinless chicken breasts
- 2 Tbsp olive oil
- ¼ cup butter
- 3 Tbsp brown sugar
- 1½ cups apple cider
Instructions
- Season chicken with salt and pepper, if desired. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 2 minutes per side or until browned. Remove from skillet.
- Add butter and sugar to skillet; cook until butter is melted. Stir in cider; bring to a boil. Reduce heat, and simmer 5 minutes. Return chicken to skillet and simmer until sauce is syrupy and chicken is done.

- 1 (32-oz) pkg refrigerated mashed potatoes
- 1 (4-oz) pkg chopped pecans, toasted
- 2 (10-oz) pkg frozen baby Brussels sprouts in butter sauce
Side Dish Instructions
- Cook Brussels sprouts according to package directions; sprinkle with toasted pecans.
- Heat mashed potatoes according to package directions.
