Pork, Tomato, and White Bean Stew
Hot Cornbread
Ingredients
- ¾ lb ground pork
- ½ onion, chopped
- 2 stalks celery, chopped
- 1 carrot, chopped
- 2 cloves garlic, minced
- 1 (15-oz) can cannellini beans, rinsed and drained
- 1 (14.5-oz) can petite diced tomatoes
- 1 (8-oz) can tomato sauce
- ¾ cup less sodium chicken broth
- 1 Tbsp chili powder
- ½ tsp Italian seasoning
Instructions
- Cook pork, onion, celery, carrots, and garlic in a large skillet over medium heat until pork is browned and crumbly; drain.
- Transfer to a 3- to 4-quart slow cooker. Stir in beans and remaining ingredients; cover and cook on LOW 8 to 10 hours.
Side Dish Ingredients
- ⅓ cup milk
- 1 (8.5-oz) pkg cornbread mix
- 1 large egg
Side Dish Instructions
- Prepare cornbread according to package directions using egg and milk. Serve half, and save remaining half for another meal.
