Pork, Tomato, and White Bean Stew

Ingredients

  • ¾ lb ground pork
  • ½ onion, chopped
  • 2 stalks celery, chopped
  • 1 carrot, chopped
  • 2 cloves garlic, minced
  • 1 (15-oz) can cannellini beans, rinsed and drained
  • 1 (14.5-oz) can petite diced tomatoes
  • 1 (8-oz) can tomato sauce
  • ¾ cup less sodium chicken broth
  • 1 Tbsp chili powder
  • ½ tsp Italian seasoning

Instructions

  1. Cook pork, onion, celery, carrots, and garlic in a large skillet over medium heat until pork is browned and crumbly; drain.
  2. Transfer to a 3- to 4-quart slow cooker. Stir in beans and remaining ingredients; cover and cook on LOW 8 to 10 hours.



Side Dish Ingredients

  • ⅓ cup milk
  • 1 (8.5-oz) pkg cornbread mix
  • 1 large egg

Side Dish Instructions

  1. Prepare cornbread according to package directions using egg and milk. Serve half, and save remaining half for another meal.
