Quick Shrimp Scampi
Crispy Polenta Cakes
Ingredients
- 1 (3.5-oz) stick garlic and herb butter, divided
- 2 lb peeled and deveined, large raw shrimp
- 1 pint grape tomatoes, halved
- ½ cup white wine
- 3 Tbsp lemon juice
Instructions
- Melt ¼ cup garlic butter in a large nonstick skillet over medium-high heat. Add shrimp, and cook until shrimp are done. Remove from skillet, and keep warm.
- Add tomatoes and wine to skillet; bring to a boil, reduce heat, and cook 5 minutes; stir in lemon juice.
- Return shrimp to skillet; add remaining garlic butter, and cook until melted. Serve over Crispy Polenta Cakes recipe.

- 2 (18-oz) tubes polenta
- ¼ cup olive oil
Side Dish Instructions
- Cut polenta into 1-inch-thick rounds. Cook polenta in hot oil in a large nonstick skillet over medium-high heat until browned and crisp.
