Easy Ham Carbonara

Ingredients

  • 12 oz uncooked angel hair pasta
  • 1 sweet onion, chopped
  • 2 Tbsp olive oil
  • 1 lb cooked, chopped ham (reserved from Awesome Baked Ham)
  • 1 cup chicken broth
  • ¼ cup butter
  • 3 egg yolks, beaten
  • ½ cup chopped fresh parsley
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to pkg directions; drain well.
  2. Sauté onion in hot oil in a large skillet until tender.
  3. Add ham, broth and butter.
  4. Heat until butter is melted.
  5. Stir in hot cooked pasta.
  6. Add egg yolks and cook until eggs are set.
  7. Sprinkle with parsley and Parmesan; toss.



Side Dish Ingredients

  • 1 (12-oz) bag frozen steam in bag peas
  • 2 Tbsp butter
  • ½ cup shredded Parmesan cheese

Side Dish Instructions

  1. Cook peas according to package directions; add butter, stirring until melted.
  2. Add Parmesan cheese, stirring to combine.
