Cajun Beef and Vegetable Meat Loaf

Ingredients
- 1½ lb ground beef
- 1 cup finely chopped onion
- 1 green bell pepper, chopped
- 1 (8-oz) pkg whole mushrooms, chopped
- ¼ cup almond flour
- 2 Tbsp tomato paste
- 1½ Tbsp Cajun seasoning
- 2 large eggs, lightly beaten
Instructions
- Preheat oven to 425°F. Combine all ingredients in a large bowl; mix until just combined. Shape into a freeform 10- x 5-inch loaf on a lightly greased rack in a broiler pan.
- Bake 50 minutes to 1 hour or until center is no longer pink. Cover loosely with foil to prevent overbrowning, if needed.
Side Dish Ingredients
- 1 large red bell pepper, sliced
- 1½ lb Brussels sprouts, halved
- 2 Tbsp olive oil
- 1 tsp salt
- 2 Tbsp lemon juice
- 3 cloves garlic, sliced
- ½ tsp pepper
Side Dish Instructions
- Bake 20 minutes or until browned and tender.
- Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
