Sheet Pan Pork Chop Dinner

Mixed Greens, Pear, and Walnut Salad

Ingredients

  • 1¼ lb bone-in pork chops
  • 2 (8-oz) pkg whole baby portobello mushrooms
  • 3 Tbsp olive oil, divided
  • 1 Tbsp chopped fresh rosemary
  • ½ tsp salt, divided
  • 2 cloves garlic, thinly sliced
  • ½ lb Broccolini, trimmed (or use broccoli spears)

Instructions

  1. Preheat oven to 450°F. Arrange pork and mushrooms on a large greased rimmed baking sheet. Drizzle with 2 Tbsp oil; sprinkle with rosemary, ¼ tsp salt, and garlic. Bake 10 minutes.
  2. Add Broccolini to pan; drizzle with 1 Tbsp oil, and sprinkle with ¼ tsp salt; toss. Bake 10 minutes longer or until pork is done.



Side Dish Ingredients

  • 1 (5-oz) pkg mixed baby greens
  • 1 small pear, cored and sliced
  • ½ cup chopped walnuts
  • 3 Tbsp refrigerated balsamic vinaigrette

Side Dish Instructions

  1. Combine all ingredients in a medium bowl.
