Pork Piccata

Ingredients

  • 2 lb boneless pork roast, halved
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ¼ cup lemon juice
  • ¼ cup butter, cut into pieces
  • 1 (3.5-oz) jar capers, drained
  • 4 cloves garlic, minced

Instructions

  1. Sprinkle pork with pepper. Cook pork in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned on all sides.
  2. Transfer pork to a 5- to 7-quart slow cooker. Add lemon juice, butter, capers, and garlic.
  3. Cover and cook on LOW 8 to 10 hours or until pork is tender.
  4. Slice pork, and serve with lemon-caper sauce.



Side Dish Ingredients

  • 1 (10-oz) pkg plain couscous
  • ¼ tsp pepper
  • 1 (12-oz) pkg frozen petite green peas
  • ¼ tsp salt

Side Dish Instructions

  1. Cook peas and couscous according to package directions. Toss together couscous, salt, and pepper.
