Chicken Parmesan Meatballs

Ingredients

  • 2 lb ground chicken
  • 1½ cups panko breadcrumbs
  • ¾ cup chopped fresh parsley, divided
  • ½ tsp garlic powder
  • 2 large eggs
  • 1 Tbsp olive oil
  • 2 cups marinara sauce
  • 1½ cups freshly grated Parmesan cheese

Instructions

  1. Combine chicken, panko, ½ cup parsley, garlic powder, and eggs in a large bowl; gently mix together using your hands.
  2. Roll chicken mixture in 1½-inch balls. Cook meatballs in hot oil, in batches, in a large nonstick skillet over medium-high heat 8 minutes or until browned and done.
  3. Return all meatballs to skillet. Add sauce to skillet, and sprinkle with cheese. Cook 3 minutes or until thoroughly heated and cheese melts. Sprinkle with ¼ cup parsley.



Side Dish Ingredients

  • 1 cup seasoned croutons
  • 1 (10-oz) pkg chopped romaine lettuce
  • ½ cup Caesar dressing

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
