Chicken Parmesan Meatballs
Caesar Salad
Ingredients
- 2 lb ground chicken
- 1½ cups panko breadcrumbs
- ¾ cup chopped fresh parsley, divided
- ½ tsp garlic powder
- 2 large eggs
- 1 Tbsp olive oil
- 2 cups marinara sauce
- 1½ cups freshly grated Parmesan cheese
Instructions
- Combine chicken, panko, ½ cup parsley, garlic powder, and eggs in a large bowl; gently mix together using your hands.
- Roll chicken mixture in 1½-inch balls. Cook meatballs in hot oil, in batches, in a large nonstick skillet over medium-high heat 8 minutes or until browned and done.
- Return all meatballs to skillet. Add sauce to skillet, and sprinkle with cheese. Cook 3 minutes or until thoroughly heated and cheese melts. Sprinkle with ¼ cup parsley.
Side Dish Ingredients
- 1 cup seasoned croutons
- 1 (10-oz) pkg chopped romaine lettuce
- ½ cup Caesar dressing
Side Dish Instructions
- Toss together all ingredients in a large bowl.
