Cast-Iron Meatballs

Parmesan Zucchini Spirals

Ingredients

  • 1½ lb ground beef (or use ground turkey or ground sausage)
  • ½ cup panko breadcrumbs
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • 1 large egg, lightly beaten
  • 3 Tbsp olive oil
  • 1 (24-oz) jar marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat broiler. Mix together beef, panko, seasoning, salt, pepper, and egg in a large bowl; shape into 18 meatballs.
  2. Cook meatballs, in batches, in hot oil in a large cast-iron skillet 10 minutes per batch or until browned all over.
  3. Return all meatballs to skillet. Stir in sauce; top with cheese. Transfer skillet to oven; broil 3 minutes or until cheese in lightly browned.



Side Dish Ingredients

  • ½ cup freshly grated Parmesan cheese
  • 1 (12-oz) pkg frozen zucchini veggie spirals
  • ¼ tsp pepper
  • 2 Tbsp olive oil
  • ½ tsp salt
  • 2 cloves garlic, minced

Side Dish Instructions

  1. Cook zucchini spirals according to package directions. Then, sauté zucchini and garlic in hot oil in a large skillet over medium-high heat 2 minutes. Stir in cheese, salt, and pepper.
