Pineapple Chicken
Sesame Jasmine Rice

Ingredients
- 1½ lb boneless, skinless chicken thighs, cubed
- ½ tsp salt
- ½ tsp pepper
- ⅓ cup plus 1 Tbsp cornstarch, divided
- 2 Tbsp olive oil
- 3 cups fresh or canned pineapple chunks
- ½ cup pineapple juice
- ⅓ cup brown sugar
- 3 Tbsp less sodium soy sauce
- 3 green onions, thinly sliced
Instructions
- Sprinkle chicken with salt and pepper. Toss together chicken and ⅓ cup cornstarch until chicken is well coated; discard remaining cornstarch.
- Cook chicken in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned.
- Meanwhile, whisk together pineapple juice, brown sugar, soy sauce, and 1 Tbsp cornstarch, stirring until cornstarch is dissolved. Reduce heat to medium-low; add brown sugar mixture and pineapple chunks to skillet with chicken, stirring to combine.
- Cook 12 to 15 minutes or until mixture is thickened and chicken is done. Serve over Sesame Jasmine Rice recipe; sprinkle with green onions.

- 3 Tbsp sesame seeds
- 3 (3.5-oz) pouches boil in bag jasmine rice
Side Dish Instructions
- Cook rice according to package directions. Stir in sesame seeds and soy sauce.
