Pineapple Chicken

Ingredients

  • 1½ lb boneless, skinless chicken thighs, cubed
  • ½ tsp salt
  • ½ tsp pepper
  • ⅓ cup plus 1 Tbsp cornstarch, divided
  • 2 Tbsp olive oil
  • 3 cups fresh or canned pineapple chunks
  • ½ cup pineapple juice
  • ⅓ cup brown sugar
  • 3 Tbsp less sodium soy sauce
  • 3 green onions, thinly sliced

Instructions

  1. Sprinkle chicken with salt and pepper. Toss together chicken and ⅓ cup cornstarch until chicken is well coated; discard remaining cornstarch.
  2. Cook chicken in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned.
  3. Meanwhile, whisk together pineapple juice, brown sugar, soy sauce, and 1 Tbsp cornstarch, stirring until cornstarch is dissolved. Reduce heat to medium-low; add brown sugar mixture and pineapple chunks to skillet with chicken, stirring to combine.
  4. Cook 12 to 15 minutes or until mixture is thickened and chicken is done. Serve over Sesame Jasmine Rice recipe; sprinkle with green onions.

  • 3 Tbsp sesame seeds
  • 3 (3.5-oz) pouches boil in bag jasmine rice

Side Dish Instructions

  1. Cook rice according to package directions. Stir in sesame seeds and soy sauce.
