Caramelized Shallot-Kale Orzo
Simple Spinach Salad
Ingredients
- 1½ cups orzo
- 2 Tbsp butter
- 3 large shallots, sliced
- ¼ cup olive oil, divided
- 6 cups chopped kale
- 1 cup freshly grated Parmesan cheese
- ½ tsp salt
- ½ tsp pepper
- ¾ cup panko breadcrumbs
- 3 Tbsp minced garlic
Instructions
- Cook orzo according to package directions.
- Meanwhile, melt butter in a small skillet over medium heat. Add shallots; cook 3 to 4 minutes or until lightly browned. Reduce heat to low, and cook 10 minutes or until very soft.
- Heat 3 Tbsp oil in a large skillet over medium-high heat. Add kale, in batches if needed, and cook 4 minutes or until wilted. Stir in cheese, salt, and pepper until combined. Remove from skillet; keep warm.
- Wipe skillet clean. Cook breadcrumbs in 1 Tbsp hot oil in same skillet over medium heat 2 minutes or until starting to brown. Add garlic; cook 1 to 2 minutes or until fragrant.

- 1 (10-oz) pkg spinach
- ⅓ cup olive oil vinaigrette
Side Dish Instructions
- Toss together spinach and vinaigrette in a large bowl.
