Chicken Caesar Pasta

Spinach-Apple Salad

Ingredients

  • 12 oz angel hair pasta
  • 10 slices bacon, chopped
  • 1½ lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 4 cloves garlic, minced
  • 1½ cups less sodium chicken broth
  • 1 (8-oz) bottle Caesar dressing
  • 2 Tbsp lemon juice
  • 3 Tbsp chopped fresh parsley
  • 2 Roma tomatoes, chopped

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, cook bacon in a large deep skillet over medium heat 6 to 8 minutes or until crisp. Drain, reserving 2 Tbsp drippings in skillet.
  3. Cut chicken in half crosswise, and pound to an even thickness between plastic wrap using a meat mallet. Sprinkle chicken with salt and pepper. Cook chicken in drippings over medium heat 5 to 6 minutes per side or until done. Remove from skillet, and thinly slice.
  4. Cook garlic in hot drippings 30 seconds. Add broth, scraping skillet to loosen browned bits. Stir in dressing, lemon juice, parsley, pasta, and chicken. Cook until thoroughly heated. Sprinkle with bacon and tomatoes.



Side Dish Ingredients

  • 1 (10-oz) pkg spinach
  • ½ cup olive oil vinaigrette
  • 2 apples, cored and chopped

Side Dish Instructions

  1. Toss together all ingredients just before serving.
