Bell Pepper Nachos

Ingredients

  • 1 red bell pepper, cut into 1 inch thick slices
  • 1 green bell pepper, cut into 1 inch thick slices
  • 1 yellow bell pepper, cut into 1 inch thick slices
  • 1 lb ground beef
  • ¼ cup water
  • 1 Tbsp chili powder
  • ½ Tbsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 cup shredded Monterey Jack cheese
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 400°F. Divide peppers, skin side down, between 2 parchment paper-lined baking sheets.
  2. Cook beef, water, chili powder, cumin, paprika, salt, and pepper in a large, deep skillet over medium heat until beef is browned and crumbly. Spoon 1 Tbsp beef onto each pepper; sprinkle with cheese.
  3. Bake 10 to 15 minutes or until cheese is melted. Top with cilantro.
