Garlic Butter Chicken, Broccoli, and Tomatoes

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 (3-oz) pkg garlic, Parmesan, and basil seasoned butter
  • 2 (12-oz) pkg broccoli florets
  • 1 pint grape tomatoes
  • 2 lemons, thinly sliced

Instructions

  1. Preheat oven to 425°F. Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet. Cook chicken in a large nonstick skillet sprayed with cooking spray over medium-high heat 2 to 3 minutes per side or until browned.
  2. Meanwhile, melt seasoned butter in microwave. Brush about 3 Tbsp seasoned butter on a large rimmed baking sheet.
  3. Arrange broccoli, tomatoes, and browned chicken on baking sheet; drizzle with remaining garlic butter. Scatter lemon slices over chicken and broccoli.
  4. Bake 12 to 15 minutes or until chicken is done and tomatoes are beginning to burst.
