Yum Yum Vegetable Bowls

Ingredients
- 3 (3.5-oz) pouches boil in bag brown rice
- 1 (16-oz) container pineapple chunks
- 2 Tbsp olive oil
- 1 (12-oz) pkg frozen shelled edamame
- 2 avocados, sliced or chopped
- 1 English cucumber, sliced or chopped
- 1½ cups French fried onions
- ¾ cup yum yum sauce
Instructions
- Cook rice according to package directions.
- Meanwhile, cook pineapple in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned. Remove from skillet.
- Add edamame to skillet; cook 3 to 4 minutes or until thoroughly heated.
- Divide rice, pineapple, edamame, avocados, cucumber, and fried onions among 6 bowls. Drizzle with yum yum sauce.
