Pistachio-Crusted Chicken

Citrus Broccolini and Couscous

Ingredients

  • 1 (6-oz) pkg roasted, salted shelled pistachios
  • ⅓ cup crumbled feta cheese
  • 1½ lb boneless, skinless chicken breasts
  • 2 Tbsp honey
  • 2 lemons, cut into wedges

Instructions

  1. Preheat oven to 400°F. Pulse nuts and cheese in a food processor until coarsely ground; transfer to a shallow bowl.
  2. Pound chicken to ¼-inch thickness between plastic wrap using a meat mallet. Place chicken on a parchment paper-lined baking sheet.
  3. Top chicken with nut mixture, pressing gently to adhere. Bake 15 to 20 minutes or until chicken is done. Drizzle with honey; serve with lemon wedges.

  • 1 (4.7-oz) pkg roasted garlic and olive oil couscous
  • 2 lb Broccolini, trimmed
  • ¼ cup water
  • 1 Tbsp olive oil
  • 1 Tbsp orange zest
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook couscous according to package directions.
  2. Meanwhile, combine Broccolini and ¼ cup water in a microwave-safe dish; tent with plastic wrap, and microwave at HIGH 3 to 5 minutes or until crisp-tender.
  3. Drain Broccolini; toss with oil, orange zest, salt, and pepper.
