Pistachio-Crusted Chicken
Citrus Broccolini and CouscousIngredients
- 1 (6-oz) pkg roasted, salted shelled pistachios
- ⅓ cup crumbled feta cheese
- 1½ lb boneless, skinless chicken breasts
- 2 Tbsp honey
- 2 lemons, cut into wedges
Instructions
- Preheat oven to 400°F. Pulse nuts and cheese in a food processor until coarsely ground; transfer to a shallow bowl.
- Pound chicken to ¼-inch thickness between plastic wrap using a meat mallet. Place chicken on a parchment paper-lined baking sheet.
- Top chicken with nut mixture, pressing gently to adhere. Bake 15 to 20 minutes or until chicken is done. Drizzle with honey; serve with lemon wedges.

- 1 (4.7-oz) pkg roasted garlic and olive oil couscous
- 2 lb Broccolini, trimmed
- ¼ cup water
- 1 Tbsp olive oil
- 1 Tbsp orange zest
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook couscous according to package directions.
- Meanwhile, combine Broccolini and ¼ cup water in a microwave-safe dish; tent with plastic wrap, and microwave at HIGH 3 to 5 minutes or until crisp-tender.
- Drain Broccolini; toss with oil, orange zest, salt, and pepper.
