Ingredients

  • ½ lb ground chicken
  • 3 Tbsp whole wheat panko breadcrumbs
  • 1 large egg, lightly beaten
  • ½ Tbsp dried oregano
  • ¼ cup freshly grated Parmesan cheese
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil

Instructions

  1. Preheat oven to 450°F. Gently mix together chicken, breadcrumbs, egg, oregano, cheese, garlic, salt, and pepper in a large bowl. Using your hands or a spoon, mix to combine.
  2. Shape mixture into meatballs using about 2 Tbsp for each; arrange on a rimmed baking sheet.
  3. Bake 15 minutes; remove from oven, and brush meatballs with oil. Increase oven temperature to 475°F, and bake 5 minutes longer or until golden brown.



Side Dish Ingredients

  • 3 Tbsp freshly grated Parmesan cheese
  • 4 oz whole wheat rotini pasta
  • 2 Tbsp olive oil
  • 3 Tbsp fresh basil leaves
  • ⅛ tsp salt
  • ¼ lb broccoli, coarsely chopped
  • 2 cloves garlic

Side Dish Instructions

  1. Blend garlic, broccoli, basil, cheese, oil, and salt in a food processor until smooth. Add mixture to pasta, and toss. Add reserved pasta water, 2 Tbsp at a time, until desired consistency.
  2. Cook pasta according to package directions. Drain, reserving ½ cup pasta water, and set aside.
