1 cup crushed nacho-cheese flavored tortilla chips
1 large egg, lightly beaten
½ (10-oz) can enchilada sauce
Instructions
Preheat oven to 400°F. Stir together beef, ½ cup cheese, seasoning, crushed chips, and egg in a large bowl. Press beef mixture into a lightly greased 8-x 4-inch loaf pan.
Bake 45 minutes; drain, if needed. Spread ½ cup enchilada sauce over top of meat loaf. Sprinkle with ½ cup cheese. Bake 20 minutes longer or until meat loaf is no longer pink in center.
Let stand 10 minutes before slicing. Serve with remaining enchilada sauce.
