Taco Meat Loaf

Roasted Potatoes and Corn

Ingredients

  • 1 lb ground beef
  • 1 cup shredded Monterey Jack cheese, divided
  • ½ (1-oz) envelope taco seasoning mix
  • 1 cup crushed nacho-cheese flavored tortilla chips
  • 1 large egg, lightly beaten
  • ½ (10-oz) can enchilada sauce

Instructions

  1. Preheat oven to 400°F. Stir together beef, ½ cup cheese, seasoning, crushed chips, and egg in a large bowl. Press beef mixture into a lightly greased 8-x 4-inch loaf pan.
  2. Bake 45 minutes; drain, if needed. Spread ½ cup enchilada sauce over top of meat loaf. Sprinkle with ½ cup cheese. Bake 20 minutes longer or until meat loaf is no longer pink in center.
  3. Let stand 10 minutes before slicing. Serve with remaining enchilada sauce.



Side Dish Ingredients

  • ½ (22-oz) pkg frozen olive oil and garlic roasted potatoes
  • 1 Tbsp butter
  • ½ tsp chile powder
  • 1½ cups frozen corn

Side Dish Instructions

  1. Cook potatoes according to package directions.
  2. Heat corn according to package directions; toss with butter and chile powder. Season with salt and pepper to taste.
