One-Pot Taco Spaghetti

Ingredients

  • ½ lb ground beef (or use ground turkey)
  • ½ (1-oz) envelope taco seasoning mix
  • 1 (10-oz) can mild diced tomatoes and green chiles
  • 1 Tbsp tomato paste
  • 1 cup water
  • 4 oz thin spaghetti, broken in half
  • 1 cup shredded Mexican-blend cheese
  • 1 tomato, chopped
  • ¼ cup sour cream

Instructions

  1. Cook beef in a large skillet or Dutch oven over medium-high heat until crumbly; drain and return to skillet. Add taco seasoning, undrained tomatoes, tomato paste, and water; stir to combine.
  2. Add spaghetti; bring to a boil. Cover, reduce heat, and simmer 8 to 10 minutes or until spaghetti is tender, stirring occasionally.
  3. Sprinkle with cheese; cover and let stand 2 minutes or until cheese is melted. Sprinkle with chopped tomato. Top with sour cream.

  • ½ (16-oz) pkg frozen garlic bread

Side Dish Instructions

  1. Bake bread according to package directions. Slice into serving-size pieces. Reserve remaining bread for another meal.
