Red Velvet Whoopie Pies

Ingredients

  • 1 box super moist devil's food cake mix
  • ½ cup water
  • ½ cup vegetable oil
  • 3 large eggs
  • 2 Tbsp red food color
  • 1 (3.9-oz) pkg chocolate instant pudding mix
  • 1 (16-oz) can cream cheese frosting

Instructions

  1. Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
  2. Beat cake mix, water, oil, eggs, food color, and pudding mix in a large bowl at LOW speed with a mixer until ingredients are just blended; then beat at HIGH 1 minute longer.
  3. Drop batter by level ¼ cupfuls onto prepared baking sheets, about 2 inches apart. Bake 13 to 16 minutes or until cookies are set.
  4. Cool cookies 5 minutes; transfer to a wire rack to cool completely.
  5. Spread cream cheese frosting on the flat side of half of cookies; sandwich remaining cookies on top. Store in refrigerator.
